Job Description
* Financial
- To prepare in conjunction with the Food & Beverage Office, an annual operating budget which will form part of the Business Plan.
- To maximize profitability of the outlet by monitoring the turnover (revenue and covers) as a first priority and controlling costs as second priority.
- To ensure that the Department’s Operational Budget is strictly adhered to and that all costs are strictly controlled.
- To control the amount of loss and spoilage within the Outlet bar in order to maximize profitability of the outlets.
* Operational
- To establish guest service standards, which meet the needs of the target, market and which are in line with the operating concept of the Outlet.
- To ensure that all operating standards comply with company and Hotel policies and Procedures and Minimum Standards.
- To ensure that all employees report for duty punctually wearing the correct employee uniform and name badges at all times.
- To ensure that all employees within the department, ensuring that the correct standards and methods of service are maintained as stated in the Department’s Operations Manual.
- To ensure that all employees provide a courteous and professional service at all times.
- To ensure the Outlet is maintained at the highest professional standard of cleanliness and that all operating equipment is in working condition.
- To ensure that all beverage and glassware par stocks are maintained within the Outlet bar at minimum operational levels.
- To carried out cashiering duties, which involve cash transaction, credit card settlement and room charge.
- To monitor and ensures all F & B staff carried out the cashiering duties promptly and efficiently according to the control guidelines set by Accounts Department
* Marketing
- To identify, in conjunction with the Food & Beverage Office, markets needs and trends.
- To monitor and analyze the products and drink lists of competitor Outlets.
- To assist the Food & Beverage Office in planning and implementing an effective sales plan and promotional activities in the outlet.
- To provide the Food & Beverage Office with recommendations for the advertising campaign and assist in putting together the advertising brief and attend subsequent meetings.

* Employee Handling
- To plan and implement effective skills training programs for all staffs in conjunction with the Training Manager and Departmental Trainers.
- To assist in the building of an efficient team of employees by taking an active interest in their welfare, safety and development.
- To ensure that all employees have a complete understanding of and adhere to the Hotel’s Employee Rules & Regulations.
- To ensure that all employees have a complete understanding of and adhere to the Hotel’s policy relating to fire, hygiene, health and safety.
* Administration
- To maintain all hotel records and forms as prescribed by Hotel Management and policies.
- To follow operating standards on the use of the computer
* General
- To carry out any other reasonable duties and responsibilities as assigned.
- To respond to change in the departmental function as dictated by the industry, company or hotel
- To conduct daily meeting with Assistant Restaurant Manager, Assistant Headwaiter.
- To assist in other outlets as when necessary or when new duties are assigned.
- To conduct training regularly to achieve and maintain a high level of service standards
